  • Cross-Pollination: Through the "Chef's Exchange" program, he hosts chefs from around the world, fostering a global dialogue on food.
  • Ecosystem Preservation: Malanga advocates for relying on local products, arguing that "the food of tomorrow is the food that people use [from] the corner." By focusing on local ingredients like fumbua leaves, cassava, and the aromatic Penja pepper, he hopes to shift the global perception of African cuisine to be as recognized and revered as Italian or French culinary traditions.
