📋 Summary

A Year-End Culinary Reflection

As 2025 comes to a close, The Sporkful host Dan Pashman celebrates the annual "New Year's Spectacular," a tradition dedicated to sharing listener food resolutions and revisiting a favorite episode from the year. The episode highlights the deeply personal connection people have with food, ranging from simple desires like eating more "grilled cheese" or "chicken parmesan" to more ambitious goals, such as learning to cook rice or embarking on a quest to consume more "steak tartare" (with the creator of the "tartarecontrol" Instagram page).

The Pizza Obsessive: A Field Trip with Scott Wiener

This episode features a deep dive into the world of Scott Wiener, the founder of "Scott’s Pizza Tours." Scott’s passion for pizza is described as "electric" and "fanatical." During a "Sunday pizza bus tour" in New York City, Scott emphasizes a scientific approach to eating, providing guests with "pocket pizza journals" to evaluate "cheese, sauce, crust."

Scott traces the origins of pizza back to 18th-century Southern Italy, explaining how it evolved from a tool used by bread bakers to cool down ovens—where dough was used to absorb heat—into the global dish we recognize today. Throughout the tour, Scott showcases the diversity of pizza styles, including:

  • Neapolitan: Characterized by its high-heat, short-bake process, resulting in a crust that is "crispy on the outside and soft on the inside."
  • Coal-fired: Exemplified by the original "Patsy's" in East Harlem, which uses low-moisture mozzarella.
  • American Artisan: Represented by "Beebe's" in Queens.
  • Grandma-style: A rectangular, pan-baked pizza known for its "crackly crust."

The Intersection of Passion and Life

Beyond the crust and sauce, the episode explores how such intense culinary obsession impacts personal life. Scott admits that when he meets someone new, he initially tries to "play it cool" and avoid talking about his "spreadsheet" of nearly 2,000 pizza boxes. His wife, Elena, notes that they bonded over shared food interests, even if Scott’s "pizza obsession" eventually became impossible to hide. The narrative suggests that while pizza is his first love, his life has expanded to include new priorities, proving that even the most fanatical foodies can find balance.

Dan Pashman’s 2026 Resolution: Back to Basics

In a moment of self-reflection, Pashman grades his own 2025 resolution—to put more effort into sandwiches—with a "C-," admitting he lacked "intentionality." For 2026, he introduces a "curveball" by choosing a drink over a food: the "Jack and Coke." Pashman argues that after 20 years of navigating complex "cocktail menus" and "mixology" that rarely hit the mark, he is choosing to "get back to basics." He encourages listeners to abandon overly complicated drinks in favor of simplicity, signaling a shift toward finding joy in the uncomplicated and reliable pleasures of the table.

📖 Transcript

Sirius XM Podcasts Hey, Sportful family, this is Alejandra calling from Charleston, Illinois.
For 2026, I resolved to eat more grilled cheese.
I had a really good fancy grilled cheese when I lived in Panama City Beach Florida, around 2019, and I haven't had one exactly like that since.
Although last month, when I visited my daughter in Tucson Arizona, we went out to eat and I saw that they had grilled cheese on the menu.
It was not the same, but it was indeed delicious.
Thank you and Happy New Year.
