The popular belief suggests that if food is retrieved within five seconds, it remains safe for consumption. However, scientific inquiry has scrutinized this folk wisdom, revealing a much more complex reality regarding bacterial contamination.
In 2016, researchers from Rutgers University conducted a rigorous study published in the Applied and Environmental Microbiology Journal to test the validity of this rule. Their methodology involved testing four distinct surfaces—stainless steel, ceramic tiles, wood, and carpet—and utilizing four types of food: watermelon, bread, buttered bread, and gummy candy.
The findings decisively "debunked the 5-Second Rule." The study demonstrated that contamination occurs instantaneously upon contact. Regardless of whether the duration was "less than a second" or extended to five minutes, bacteria were transferred to the food items. The data confirmed a direct correlation: "the longer the contact time, the more bacteria were transferred to the food."
Not all surfaces and food items interact with bacteria in the same way. The study highlighted that moisture plays a critical role in microbial transfer. For instance, "watermelon flesh," which possesses a "water content of more than 90 percent," showed significantly higher levels of contamination compared to drier items like "gummy candies."
