  • Chocolate Bars: Ingredients like sugar, milk powder, and extra cocoa butter are added to the liquor. The mixture is then processed in a conch, a machine that stirs and heats the chocolate to smooth its texture and refine its flavor.

The Final Touch: Tempering

To achieve the perfect finish, chocolate makers use tempering—a precise process of heating, cooling, and reheating the chocolate. This aligns the cocoa butter crystals, ensuring the finished product is shiny and provides a clean "snap" when broken. Without proper tempering, chocolate may appear dull or develop "bloom," a white streaky surface.

Understanding Chocolate Varieties

Consumers can distinguish between chocolate types by checking the ingredient list and color:

  • Dark Chocolate: Contains the highest percentage of cacao and minimal sugar.
